Multi-Compartment Sinks are great for washing supplies at establishments that don’t utilize a huge volume of dishes!
If you are a small establishment, you probably don’t have a large dish washing machine so the three sink option is usually the best way to go so you can not only wash your dishes, but also sanitize them. You can utilize the first bin for spraying and washing the dishes, the second compartment for the soap, and the third compartment for sanitation.
Establishments with a large volume of dishes such as full service restaurants, can utilize the one or two compartment sinks because they will have (or still need) a dishwashing machine that you will need for sanitation, however you will still need a separate space to actually wash and scrub off that extra grime from dishes prior to their sanitation process.
