Perks of an Immersion Blender aka Power Mixer

  I think that one of the most unusual looking, yet necessary pieces of commercial restaurant equipment are power mixers aka immersion blenders. 

Immersion blenders are very heavy duty and are ideal for liquefying soups, sauces, pureeing fruits/ vegetables and preparing the smoothest of pates in just minutes!  The difference between an immersion blender and a food processor is that an immersion blender does not require a specific container to be used for blending.  They also allow for you to mix/puree/chop larger amounts of food at once, as well as target specific areas (i.e.: lumpy parts) over others.  Since you can target certain areas, you are able to maintain a thicker consistency or delicate “batter” because you are not over mixing and risking an overly runny and undesirable consistency.  It is also easier to take a power mixer with you when catering an event.  The difference between an immersion blender and a hand mixer is that a hand mixer does not chop the food, whereas the immersion blender chops and mixes at once.
